Newfie Baklava & Newfie Triangles

It’s Christmas time and to me that means friends, family and baking! And one of the things I love to bake is baklava.

There are a lot of complicated baklava recipes, but I’ve made this one a few times and it’s awesome. And it’s fairly simple.

I’m sure some are saying, “Why ‘Newfie’?”. Well, because part of the ingredient list is Newfie Screech. You can substitute some other rum, but I always have Screech on hand for other purposes and found it works wonderfully well in this recipe.

Newfie Baklava

Ingredients

5 cups coarsely chopped mixed salted nuts (cashews, brazil nuts, pecans, walnuts, almonds)
1/2 tsp all spice
1/2 tsp cloves
1 tsp cinnamon
2 cups honey
3 cinnamon sticks
peel from 1 lemon, no pith
2 tbsp lemon juice
1 cup sugar
3/4 cup water
1/2 cup Newfie Screech rum
1 1/2 cup clarified butter
phylo pastry

Method

Day Before

  1. Place the phylo pastry in the fridge to thaw overnight.

Bake Day

  1. Preheat oven to 300F.
  2. Coarsely chop the mixed nuts.
  3. Mix the nuts with the all spice, cinnamon and cloves (note, you can put the spices in the food processor to simplify the mixing).
  4. Warm the honey, water and sugar until very runny and mix in the Screech and add the cinnamon sticks and lemon peel.
  5. Butter the bottom of a 9×11 inch pan.
  6. Place 6 sheets of phylo pastry into pan, brushing each layer with butter.
  7. Place 1/3 of nut mixture into pan, spread evenly.
  8. Place another 6 sheets of phylo, again brushing each with butter.
  9. Place 1/3 of nut mixture into pan evenly.
  10. Place another layer of 6 sheets of phylo, again brushing each with butter.
  11. Place remainder of nut mixture into pan evenly.
  12. Place a final layer of 6 sheets of phylo as before.
  13. Cut layers with sharp knife into diamond shapes.
  14. Bake for 1 1/2 hours.
  15. When done, pour the Screech-honey mixture over top — it’ll sizzle like crazy.
  16. Set aside at least 1 hour before serving.

You can also do the above as a variation I call Newfie Triangles. Instead of baklava style do the following:

Newfie Triangles
5 cups coarsely chopped mixed salted nuts (cashews, brazil nuts, pecans, walnuts, almonds)
1/2 tsp all spice
1/2 tsp cloves
1 tsp cinnamon
2 cups honey
1/2 cup Newfie Screech rum
1/2 cup clarified butter
phylo pastry

Method

  1. Preheat oven to 350F.
  2. Coarsely chop the mixed nuts.
  3. Mix the nuts with the all spice, cinnamon, cloves, honey and Screech.
  4. Take single sheets and butter one side.
  5. Cut sheets into 3 inch long strips lengthwise.
  6. Place 1 tablespoon of nut mixture onto one corner and fold over as you would a flag.
  7. Place on cookie sheet lined with parchment.
  8. Continue until you run out of nut mixture.
  9. Bake for 15 – 20 minutes or until golden.
  10. Set aside at least 1 hour before serving.

Newfie Triangles are a great treat since they’re dry on the outside and can be eaten by hand. Great for a party!
